Ingredients

Scale
  • 1 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon cornstarch (optional, for extra softness)
  • 1 1/2 cups sweetened coconut flakes
  • 1 1/2 cups semi-sweet chocolate chips
  • 3/4 cup whole or chopped almonds (lightly toasted for extra flavor)

Instructions

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy (2-3 minutes).
  • Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  • In a separate bowl, whisk together flour, baking soda, salt, and optional cornstarch.
  • Gradually add dry ingredients to the wet mixture. Mix until just combined—don’t overmix.
  • Fold in sweetened coconut flakes, semi-sweet chocolate chips, and almonds with a spatula.
  • Scoop dough using a tablespoon or cookie scoop and place on prepared baking sheets about 2 inches apart.
  • Bake for 10-12 minutes, until edges are lightly golden but centers are still soft.
  • Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  • Enjoy warm or store in an airtight container.

Notes

  • For gluten-free cookies: Use a 1-to-1 gluten-free baking flour blend.
  • For vegan cookies: Swap butter with vegan butter and eggs with flax eggs (2 tbsp ground flaxseed + 6 tbsp water).
  • Add a slice of bread to your storage container to keep cookies soft longer.
  • Freeze cookie dough balls for up to 3 months—bake from frozen, adding 1-2 extra minutes of baking time.
