Description

lbs boneless, skinless chicken breasts or thighs

6 cups chicken broth (low sodium if preferred)

8 oz cream cheese, softened and cubed

1 packet ranch seasoning (or 3 tbsp homemade blend)

2 cups uncooked egg noodles

1 cup shredded cheddar cheese (optional)

4 slices bacon, cooked and crumbled

1 small onion, diced

2 garlic cloves, minced

Salt and pepper to taste

Optional: chopped parsley, red pepper flakes for garnish


Instructions

  • Cook Bacon: In a large soup pot or Dutch oven, cook bacon until crispy. Remove and set aside. Leave 1 tbsp of bacon fat in the pot.
  • Sauté Aromatics: Add diced onion and garlic to the pot. Cook until soft and fragrant, about 2–3 minutes.
  • Add Chicken & Broth: Place chicken breasts into the pot. Pour in the broth and add ranch seasoning. Bring to a boil, then reduce heat and simmer for 20–25 minutes, or until chicken is fully cooked.Shred Chicken: Remove chicken, shred with forks, and return to the pot.
  • Stir in Cream Cheese & Cheddar: Add cream cheese cubes and shredded cheddar (if using). Stir over medium-low heat until smooth and fully incorporated.
  • Add Noodles: Stir in egg noodles and cook uncovered for 8–10 minutes, or until tender.
  • Add Bacon & Finish: Stir in crumbled bacon. Taste and adjust seasoning with salt and pepper.
  • Serve Hot: Garnish with parsley, extra cheese, or red pepper flakes if desired.

Notes

To make it keto-friendly, swap noodles for chopped cauliflower or zucchini noodles.

For dairy-free, use plant-based cream cheese and skip cheddar.

Store in fridge for up to 4 days. Add a splash of broth or milk when reheating.

Freeze without noodles for best texture.
