Description

Soft, fluffy, and full of vibrant green tea flavor, this homemade matcha pan (Japanese green tea bread) is the perfect balance of tradition and wellness. Easy to bake, visually stunning, and packed with nutrients from matcha, it’s an ideal treat for breakfast, snacks, or desserts.

Ingredients

Scale
  • 2½ cups bread flour

  • 2 tbsp matcha powder (culinary grade)

  • 3 tbsp sugar

  • 1 tsp salt

  • 2 tsp instant yeast

  • ¾ cup warm milk (dairy or plant-based)

  • 1 large egg

  • 3 tbsp unsalted butter (softened)

Instructions

  • In a bowl, mix warm milk, 1 tsp sugar, and yeast. Let sit for 5–10 minutes until foamy.
  • In a large mixing bowl, combine flour, matcha powder, remaining sugar, and salt.
  • Add the yeast mixture and egg into the dry ingredients. Mix until dough forms.
  • Knead the dough for 10 minutes on a floured surface, then add butter and knead until smooth and elastic.
  • Place the dough in a greased bowl. Cover and let rise in a warm place for 1–2 hours until doubled in size.
  • Punch down the dough, shape into 6 equal buns or a loaf. Let rise for another 30–40 minutes.
  • Preheat oven to 350°F (175°C). Bake for 15–18 minutes or until golden brown.
  • Let cool before serving. Enjoy warm or filled with cream or red bean paste!

Notes

  • For a vibrant green color, use fresh, high-quality matcha.
  • Make it vegan by swapping egg with flaxseed and using plant-based milk and butter.
  • Add fillings like sweet red bean, custard, or cream for variations.
