1½ cups vegetable or chicken broth

1 tsp sugar (optional)

Salt and black pepper to taste

½ tsp dried basil or a few fresh basil leaves

½ cup heavy cream or coconut cream (optional for creaminess)

🧀 Grilled Cheese Sandwiches:

8 slices of bread (sourdough or white preferred)

4 slices sharp cheddar cheese (or mix with mozzarella/gouda)

2 tbsp butter or mayonnaise (for spreading)


Instructions

🍅 Tomato Soup:

Sauté Aromatics: In a large pot, heat olive oil over medium heat. Sauté onions and carrots until soft, about 6–8 minutes. Add garlic and cook for 1 minute.

Add Tomatoes & Broth: Add the canned tomatoes with juice and the broth. Stir and bring to a simmer.

Simmer: Add basil and sugar (if using). Let it simmer uncovered for 20–25 minutes.

Blend: Use an immersion blender or transfer in batches to a countertop blender. Blend until smooth.

Finish: Stir in heavy cream (optional), season with salt and pepper, and simmer for 5 more minutes.

🧈 Grilled Cheese:

Prep Sandwiches: Butter or mayo one side of each slice of bread. Place cheese between two slices (buttered side out).

Grill: Heat a skillet or griddle over medium-low heat. Cook each sandwich for 3–4 minutes per side or until golden brown and cheese is melted.

Serve: Slice diagonally and serve immediately alongside a warm bowl of tomato soup.

Notes

For a spicy twist, add red pepper flakes or chipotle to the soup.
